Inspiration from Madeira

After unexpected year full of unprecedented events I have unprecedentedly disappear for a month to Madeira. I needed to get some distance and different perspective on the situation. Constant change of circumstances and dramatic course of events during the times of pandemic pushed me to overlook some of well-established processes in the company. One of them was marketing/product plan for the whole year that I will tell you more about. Especially about one part of it.

 

Before many years I have been developing new products every month and now I am just wondering, HOW it was even possible. I suppose that was the time when we were small company…Since then the company and teams in it grew and I lost the ability to find the time and the passion for it. I was subjugated by the operations, the people, the processes. I have been spending most of the time on meetings in my office. I have been visiting the lab veery rarely. I literally started to hate pastry.Paradoxically thanks to Covid times, we reduced the teams and the processes and we found the way back to the basics. There I am happy. I have never seen myself as the leader of big corporate company, I want to bake things, not “talk” things. Nevertheless, during the times of Covid I have been baking the ways how to save the company from bankruptcy instead of baking new products. Lots of firing, restructuring, negotiating… Majority of the most tiring activities that entrepreneur has. Thanks to my team and my brother I was able to go away for a month and find my passion again… Ufff I am so grateful for that.

 
 
 
 

The foundation of the idea came to life just on Madeira, in little village called Calheta, where we were going to the ice-cream shop. I was getting regularly the combination of mango sorbet and vanilla ice-cream. And because of the reason that the mango sorbet was sooo delicious, naturally made of their famous mangos and the consistency of the vanilla ice-cream was irresistible, I have decided to choose those two elements as a base for the seasonal offer.

 
 
 
 

The base of most of the desserts is the new recipe for delicate soft vanilla ganache with original Madagaskar vanilla pods, which softens the fresh sour mango and strawberry taste.

 

…”Can you see the brutally soft moist consistency???”…

 
 

Another interesting component is mango chutney cooked with lemon juice and vanilla and few drops of alcohol to elevate the taste.

 
 

And the main part is built with the mango puree with the highest intensity of taste as you can imagine, cooked from 100% mango pulp. On the picture where you can see the strong contrast of soft white vanilla ganache and distinctive orange mango, the taste will feel the same. Be prepare for the perfect contrast of soft vanilla creamy taste and pure freshness of mango.

 
 
 
 

You will find several desserts in the new edition, that you already know from Ollies, for example the macaron,only in new taste as mango-vanilla-jahoda, or for instance the eclair with the same flavor combination. I am proud of the design of the desserts, hope you will be too.

 
 

Also I am aware that we didn’t add any new cheesecake for long time, so I am convinced that you will be happy about this one. Strong flavor of mango combined with passion fruit puree softened with vanilla ganache and crunchy coconut chips.

My little surprise for all the ice-cream lovers is frozen macaron, similar to traditional czech ice-cream sandwich „Ruská zmrzlina“. The difference is that instead of wafer you will have macaron that is moistened with mango puree and it is filled with mango sorbet and vanilla ice-cream. You will hardly resist to this refreshment.

And the last thing I want to present to you, for us czech people something unusual, on the contrary for Portuguese people very common thing is Pastel de nata, typical Portuguese dessert made of puff pastry dough ( traditionaly ) we made it from croissant dough – that is almost the same – filled with egg yolk cream and vanilla and lemon zest. Veeeery delicate thing.
